A Sweet Treat: Using Leftover Egg Whites

SHORT AND SWEET!

I was making lemon curd, and had a ton of egg whites leftover. I racked my brain regarding what I could do with my egg whites and headed to the Google. Meringues!!!! This was my first try at meringue cookies and it was surprisingly easy. Wait?! Did I say easy? Relatively easy, because for some odd reason I decided to whip egg whites by hand. I honestly don’t knwo what I was thinking but my wrist was struggling, it was downright painful. Never again will I do that, but I will definetly make these again. Especially because they were a perfect sweet treat for a guest we had who is lactose intollerant.

The recipe comes from Sugar Spun Run and is a keeper. I added a little almond extract to mine, and in the future would love to try lemon extract.
